Tonight's menu:

Leek and Potato Soup
Romaine Salad with red onion, capers, and crumbled feta cheese
Crusty ciabata rolls

Leek and Potato Soup


Two pounds of fresh leeks, sliced and WELL rinsed
Three tablespoons butter, plus one pat of butter for each finished serving
Three medium-sized white fleshed potatos
One cup half-and-half
Three cups milk
Salt and pepper
One half cup white wine

Cube potatos and boil until tender. Drain. Mash with splash of milk and pinch of salt. Saute leeks in butter until soft. Add wine. Add half-and-half. Bring to simmer. Add milk and mashed potatos. Stir well. Adjust to desired thickness by adding more milk or if too thin, use a flour roue. Top each serving with pat of butter, pinch of salt, fresh ground pepper.

Served with an Oregon Pinot Gris from NW Food and Wine.
